Serves for 4 persons (8 skewers): 500g squid already cleaned, 8 squid (about 300g), 2 tablespoons extra virgin olive oil, 8 shrimp, 8 cherry tomatoes, 40ml of white wine, salt to taste. For the breading: 50g bread crumbs, 3 tablespoons chopped parsley, pepper to taste, 1 tablespoon extra virgin olive oil, 1 clove of garlic.
Preparation: To prepare the skewers of sea, start to clean the squid: remove tufts and set aside, empty the bag of giblets and clean them well. Open bag of squid with a central cut and cut rectangular pieces. If you have whole squid, clean them. Cut the squid into strips 1-2 cm and clean the prawns by removing the head, shell and leaving the tail. Impact, with a boxcutter, the back of each shrimp to eliminate the black wire inside. Cut the tomatoes in half. Dial the skewers: take a strip of squid, pierce with a skewer and toggle its folds with rectangles of squid. Continue for the other 7 skewers. Prepare the breading: In a bowl mix the breadcrumbs with the parsley and garlic, sprinkle with pepper and add a little olive oil. Pass the skewers in the breading on both sides. Cook the skewers in a pan with 2 tablespoons of olive oil over high heat for 5-6 minutes. Half cooked with white wine and turn the skewers and continue cooking for another 5 minutes and the skewers are ready.
